A few years ago, I was working in the yard with my Dad. Florida’s summer heat is unforgiving. After pulling weeds and cleaning up the yard for a few hours, we were in need of a much-deserved break. It was time to go inside to see what I could pull together that would cool us off. It just so happened that I had a few ingredients that I could work into a nice drink. Watermelon, ginger, mint, and simple syrup in the refrigerator. Then, I decided to throw everything into my Ninja with some ice. Once it was finished, I took a little taste and it was absolutely DELICIOUS! The Watermelon Ginger Mint Slushy was born.
I quickly poured a second glass, and took my newly created drink outside to my Dad, he loved it. We both kicked our feet up in our Adirondack chairs and cooled off.
My Watermelon Ginger Mint Slushy is now one of my favorite drinks to serve in the summer. The kids love it too.
This recipe is easy to pull together. First, prepare the watermelon into cubes or cut it into chunks, then freeze. The frozen watermelon pieces should fit into a blender or blender cup.
To streamline this process, use broken-down watermelon that is packaged and found at your local grocery store. Then, place the watermelon in the freezer. Arrange the watermelon in separate pieces on a cookie sheet. Then, freeze. Freezing the watermelon pieces separately on the cookie sheet will ensure the watermelon does not freeze together into one large mass that does not fit into the blender.
Second, gather the remaining ingredients, a few sprigs of mint, grated or minced ginger, simple syrup, and water.
Lastly, place all of the ingredients in the blender until smooth. Pour into a tall glass. Garnish with a sprig of mint and a frozen piece of watermelon. Drink!
Kick it up a notch, transform this light and refreshing drink into an adult beverage by adding vodka or tequila.
