Why You’ll Love Coconut Lime Protein Balls

These protein balls combine the zesty tang of lime with coconut butter’s creamy, rich flavor. They are not just tasty – they are also packed with nutritional benefits.

Nutritional Benefits of Coconut and Limes

Coconut: Coconut is a nutritional powerhouse. It is rich in healthy fats, particularly medium-chain triglycerides (MCTs), which can provide a quick source of energy and may support weight loss and metabolism. Additionally, coconut contains antioxidants that help protect the body from oxidative stress and inflammation. The fiber in coconut also promotes digestive health.

Limes: Limes are an excellent source of vitamin C, an essential nutrient that supports the immune system, skin health, and collagen production. The antioxidants in limes help protect your cells from damage and may reduce the risk of chronic diseases. Limes also add a refreshing flavor without many calories.

Grass-Fed Beef Protein: When it comes to protein, quality matters. Grass-fed beef protein is derived from animals that are pasture-raised and eat a natural diet of grass. This type of protein is generally higher in omega-3 fatty acids and conjugated linoleic acid (CLA), both of which have numerous health benefits, including anti-inflammatory properties and support for heart health. Grass-fed protein is also free from hormones and antibiotics commonly found in conventionally raised livestock. I like to use Amy Myers, MD’s Paleo Protein. I prefer the unflavored protein powder because it contains 26 grams of protein per serving whereas the other flavors have 21 grams per serving. This protein powder is a hydrolyzed beef protein that is a complete protein, meaning it contains all nine essential amino acids that the body cannot produce on its own. These amino acids are crucial for muscle repair, growth, and overall health.

Health Benefits for Hashimoto’s

For individuals with Hashimoto’s thyroiditis or other thyroid conditions, nutrition plays a critical role in managing symptoms and supporting thyroid health.

Here’s how coconut, lime, and grass-fed hydrolyzed protein can be beneficial:

The healthy fats in coconut, particularly MCTs, can be highly beneficial for those with thyroid disease. MCTs are easily digestible and provide a quick source of energy, which is often needed in individuals with hypothyroidism who may experience fatigue. Additionally, the anti-inflammatory properties of coconut help reduce inflammation associated with Hashimoto’s.

The high Vitamin C content in limes supports the immune system, which is crucial for individuals with autoimmune conditions like Hashimoto’s. Vitamin C is also important for adrenal health, and strong adrenal function supports thyroid function.

Hydrolyzed grass-fed protein is wonderful for your gut health. The hydrolysis process enhances protein absorption but also makes hydrolyzed beef protein easier on the digestive system. It can be particularly beneficial for individuals with digestive issues or those who experience bloating and discomfort with other protein sources. The smaller peptides are gentler on the stomach and less likely to cause gastrointestinal distress.

Whether you’re looking for a quick snack, a pre-or post-workout boost, or a guilt-free treat, these protein balls are a perfect choice.

I hope you like making and eating these Coconut and Lime Protein Balls as much as I do. They are a testament to how healthy ingredients can come together and create a nutritious snack.

Ingredients

Instructions

  1. Line a baking sheet with parchment paper. Set aside.

  2. Add the shredded coconut to a food processor and blend until a coarse crumb forms. Reserve 1 Tablespoon for garnish and set aside.

  3. Add the remaining ingredients to the shredded coconut in the food processor and blend until a soft dough forms.

  4. Form the mixture into even balls using a cookie scoop that is 1-3/8" in diameter. The dough will be soft and sticky. It will firm up once it sets in the refrigerator. If you don't have a cookie scoop, you can form the dough into even balls with your hands, roughly an 1" in diameter.

  5. Transfer balls onto a line baking sheet. Sprinkle tops with reserved coconut.

  6. Cover with plastic wrap and place in the fridge to set for at least an hour before serving.

  7. Transfer to an airtight container. Store in the fridge (keeps up to 3 days) or freezer (keeps up to two months) until ready to enjoy.
