Pumpkin Spice Croffle is a fusion of pumpkin pie, a croissant, and a waffle. It has a light crunchy exterior, with a soft pillowy dough interior, surrounding a pumpkin spice filling that is topped with a gorgeous silky orange pumpkin spice icing. My youngest loves croissants! All things breakfast, actually. We both love waffles. But, Croffles blew our minds! We can not believe thow amazing it is to combine two of our favorite things together. Why not try it at home?
Since my daughter has a dairy allergy, we came up with a croffle she loves to eat. Why stop there? It is fall, aka pumpkin pie season, and we love pumpkin pie. We decided to put all these things together in one yummy treat.
We chose to use crescent roll dough because it is dairy-free, and while it is not actual croissant dough, it lends itself just enough to hit the spot. Then, we decided to fill it with a pumpkin pie mixture. The filling is lightly sweet and perfectly pumpkin spicy.
We make a pocket with the crescent roll dough, filling it with the pumpkin pie mixture, we placed the filled dough pocket in the waffle iron. Once it is golden brown, it is ready to remove from the iron. After the croffles cools, we ice it with pumpkin spice icing and decorated it with sprinkles colored with the season.
The spices of fall mix together with pumpkin creating a warm, delicious filling, that is enveloped in soft golden sweet crescent roll dough that is crispy on the outside. Then, you taste the pumpkin spice that dances on your tongue. It is a wonderful bite that keeps you coming back for more.

Pumpkin Spice Croffle
Description
Pumpkin Spice Croffle is a fusion of Pumpkin pie and a croissant waffle, also know as the Croffle. These ingredients come together as a crispy, tender, sweetly iced pumpkin spice confection that is sure to please the senses.

Preheat the waffle iron.
In a mixing bowl, combine the pumpkin, powdered sugar, and pumpkin pie spice. Set aside.

Remove crescent roll dough from the can and unroll the sheet on your working surface.

With a knife, cut the dough along the perforated lines in the center of the dough, horizontally and vertically.
First, you will cut horizontally across the center of the perforated dough from left to right. Then, you'll cut down the center vertically along the perforated dough from top to bottom. This will make four rectangular pieces and will ultimately make four pockets once filled.
Pinch the diagonal perforated lines in each quadrant sealing them together to make one piece. Repeat with the remaining pieces.

Spoon a tablespoon of the pumpkin spice mixture on one side of each quadrant, placing it in the center of half of each piece. Be sure to leave a 1/2" margin around the perimeter. Repeat 3 times.

Fold over one corner of a rectangular piece to meet the other edge creating a square with the dough.

Press the edges of the dough together along the perimeter of each square to create a seal. Repeat 3 times with the remaining squares.

Place each pocket into your waffle iron and cook until golden brown. Then, remove the croffles.

For the icing, combine the pumpkin, powdered sugar (sifted), pumpkin pie spice, water, vanilla, and salt in a mixing bowl until smooth.

Once cooled to touch, ice the croffles with the pumpkin spice icing and decorate with your favorite sprinkles (optional).
Note
Garnish with your favorite sprinkle. If you prefer to go without the sprinkles, you can lightly dish with more pumpkin spice seasoning. Or, simply go without. All options are delicious.
