My daughters were counting down the days until the release of Taylor's new album. We planned a listening party after school with a couple of their friends. I wanted to make the day extra special for them. So, I found the handwritten Taylor Swift's Chai Sugar Cookie Recipe. It is a twist on a 2009 recipe by Joy Wilson, also known as Joy the Baker. Like Swift, I made my version of the recipe to accommodate our allergen-friendly home.

Along with Taylor's Chai Sugar Cookie surprise, I also wanted to surprise them with the exclusive TTPD Phantom Clear vinyl record from Target to add to our collection.
After dropping off our oldest daughter at school on Friday, April, 19th, I ordered TTPD for pickup from Target. After finishing work Friday afternoon, I raced to Target, picked up the freshly released, shrink-wrapped album, hurried home, and started baking.
First, preheat the oven to 325 degrees Convection or 350 degrees Conventional. Then, cream coconut oil, granulated sugar, and powdered sugar together. Add egg and vanilla to the oil and sugar mixture. Once combined, mix in almond and Gluten-free flour, nutritional yeast, baking soda, sea salt, and the contents of a chai tea bag.
Next, chill the dough for 1 hour.
Now, roll spoonfuls of dough into 1-1/2” balls; roll them in the remaining sugar. Press each with the flat end of a glass dipped in sugar until 1/4 inch thick. Place 2 inches apart on baking sheets.
Bake until just browned around the bottom edges, about 9 minutes. Transfer to wire racks; let cool completely.
While the cookies are cooling, make the icing. Mix powdered sugar, nutmeg, almond milk, and vanilla extract until smooth.
Once the cookies are cooled to the touch, spread each cookie with icing just over the center, leaving the cookie edges free of glaze.
I finished baking these cookies in record time. Pun intended. My husband pulled into the driveway as I placed the last cookie on the serving platter.
The girls rushed inside to blast the new sounds through the house. They could not believe their eyes when they saw their listening party surprises. The teenage shrills were overwhelming. In true teenager fashion, there was a slow-motion, ASMR "unboxing" of the Album's packaging. Then, they stuffed their faces while they analyzed every lyric and note.
All-in-all Taylor Swift's Chai Sugar Cookie recipe hits the mark. Thank you Joy Wilson and Taylor Swift for creating this recipe. It will be a staple in our home for many years to come.
