PUPkin Peanut Butter Waffle Donuts make our little Pommie Roxy go crazy! I am sure, that like us, you like to spoil your furbaby. That is why the PUPkin Peanut Butter Waffle Donut was born.

I think of Roxy as my little Sous Chef. If I am in the kitchen or near the grill, so is she! Roxy will be at my side, ready to help clean up any little crumb that may fall to the floor. She LOVES to eat! Her passion for food is like no human I have ever met. Roxy is by no means a picky eater. Her palette is very experienced. She enjoys many dog-friendly eats like pumpkin, green beans, broccoli, strawberries, quinoa, oats, and peanut butter to name a few.

My brother lovingly calls her his "Little Fat". She is a bottomless pit for all things edible and some not so edible.

Roxy has the energy of a puppy. She is actually a mature Pomeranian. Don't let her fool you. Roxy has a very clean diet that was developed as a result of a number of health issues. After some tummy troubles, I started to research preparing her food at home instead of feeding her processed kibble. After changing her diet, Roxy's coat was silky and smooth, she was more energetic and her overall demeanor improved.

A couple of summers ago my girls wanted to get in the kitchen and make a treat. I suggested we make something new for Roxy. After a little brainstorming, we grabbed some oats, peanut butter, pumpkin, and some honey. All of these ingredients are very high on Roxy's list and best of all, they are all-natural. Then, we scooped the mixture into our waffle iron and before you knew it, we coined a new treat, the PUPkin Peanut Butter Waffle! Roxy absolutely loved them.

At Christmas, my brother gave the girls a mini donut iron and this is how we added a little variety to the mix. There are times when we make Roxy mini waffles and others when we make her mini donuts. The mixture is interchangeable and it is why we like to call this recipe waffle donuts.

Description

Pumpkin, peanut butter, honey, and oat mini waffles or donuts that are dog-friendly. This batter can be used interchangeably with a waffle or donut iron.

Ingredients
    Donut Batter
  • 1 cup Oat Flour
  • 1/2 cup Canned Pumpkin
  • 1 Egg
  • 2 tablespoons Peanut Butter (Natural)
  • 1 tablespoon Honey
  • 1/4 cup Water
  • Drizzle
  • 2 tablespoons Natural Peanut Butter (Melted)
  • 3 tablespoons Honey
  • 1 teaspoon Water
  • Garnish
  • 1 tablespoon Desiccated Coconut
Instructions
  1. Place Oat Flour, Pumpkin, and Egg in a mixing bowl and combine. 

  2. Stir in the honey peanut butter and water until they come together in a thick batter.

  3. For mini donuts, pipe approximately two tablespoons of the mixture into the donut iron. 

    For waffles, scoop batter into a greased waffle iron with a mini cookie scoop.

  4. Allow the mixture to cook for 3-5 minutes depending on your iron.

    Remove from waffle donut from the iron and allow it to cool.

  5. Once cooled, mix the melted peanut butter, honey, and water together in a small mixing bowl. 

     

  6. Put the mixture into a piping or plastic sandwich bag. Cut a small hole in the tip of the bag and drizzle across the waffle donuts. Sprinkle with desiccated coconut. 

  7. Allow the drizzle to dry for 5 minutes and serve!

Note

The batter can also be used in a waffle or donut iron.
