After learning Riley, the youngest of our girls is allergic to dairy, I started to develop a dairy-free rice cereal treat recipe. I cannot imagine being a kid and not having this childhood rite of passage. They are absolutely DELICIOUS. Gooey, buttery, not to mention, crunchy. The best part is making them and getting to lick the remnants off your hands.
For some time, she begged for the homestyle rice cereal treat version with the added marshmallows over the traditional treats. After my many failed attempts, I have finally landed on our favorite iteration of the recipe. Not only are they dairy-free, but gluten-free too! Even Dylan, our oldest, loves them! And, she is a chocoholic!
For this recipe, all you need to make this yummy snack are some simple ingredients like gluten-free rice cereal (Millville Crispy Rice), mini marshmallows, refined coconut oil, nutritional yeast, vanilla extract, and salt. The marshmallows add a sweet note and give the treats a chewy texture, the refined coconut oil replaces butter along with nutritional yeast, adding a slightly nutty and buttery flavor, while the vanilla and salt accent the flavors of the other ingredients.
First, melt the refined coconut oil in a large pot. Then, add the nutritional yeast until mixed together.
Reserve 1-1/2 cups of mini marshmallows. Add the remaining marshmallows to the melted coconut oil, and warm the marshmallows until they are 75% melted. Now, mix in the vanilla and salt.
Next, turn off the heat and add half of the rice cereal to the marshmallow mixture. After the cereal is almost combined, add the rest of the rice cereal.
Once all the ingredients are combined, add the reserved marshmallows and mix them together until the reserved marshmallows are evenly distributed throughout the treat mixture.
Lastly, transfer the mixture to a parchment paper-lined 9x13-inch baking pan and spread it out evenly.
RICE CEREAL TREAT PREP HACK - Here's a little trick to getting the mixture distributed into your pan is to lightly wet your hands. Then, the marshmallow doesn't stick to your hands and you can move freely.
Cool to room temperature for at least an hour before cutting into 12 squares.
Store any leftovers in an airtight container for up to 5 days. To jazz things up a bit, drizzle the tops of your Homestyle Rice Cereal Treats with some dairy-free melted chocolate for an even more indulgent experience.
These Homestyle Rice Cereal Treats are easy to make and uber delicious. They have a subtle buttery hint of nuttiness from the nutritional yeast, and a light sweetness from the melted marshmallows. Plus, they are dairy-free and gluten-free, so everyone can enjoy them.
Line a 9" x 13" baking pan with parchment paper, lightly grease, and set aside.
In a large pot, melt refined coconut oil over low heat.
Add in nutritional yeast and mix until combined.
Reserve 1-1/2 cups of mini marshmallows.
Melt marshmallows into the coconut oil and nutritional yeast mixture. Stir occasionally until the marshmallows are almost completely melted. This will take about 5-10 minutes depending on the type of stove you use and the size of your pan.
Stir in vanilla and salt.
Remove from heat. Add rice cereal into the marshmallow mixture.
Once the rice cereal and marshmallow mixture is completely incorporated, add in the reserved marshmallows.
Transfer to the baking pan.
Wet hands with water and press mixture into pan, distributing evenly.
Cool to room temperature (about an hour) and cut into 12 squares.
