Description
Coconut Lime Protein Balls offer a delightful balance of flavors, combining the rich, creamy taste of coconut butter with the refreshing, tangy zest of lime. Each bite is a tropical treat, with a subtle sweetness and a hint of citrus that perfectly complements the nutty, natural flavor of the coconut.
Ingredients
  • 1 1/4 Cups Unsweetened Shredded Coconut (Organic)
  • 1/2 Cup Coconut Butter (Nutiva Organic Coconut Manna)
  • 3/4 oz Unsweetened Protein Powder (Grass-Fed Pasture-Raised Beef Protein Powder)
  • 1 1/2 tsps Lime Zest (Organic)
  • 2 1/2 tbsp Lime Juice (Organic)
  • 3 tbsp Maple Syrup (Organic)
  • 1 tsp Vanilla Extract
  • 1/8 tsp Sea Salt
Instructions
  1. Line a baking sheet with parchment paper. Set aside.

  2. Add the shredded coconut to a food processor and blend until a coarse crumb forms. Reserve 1 Tablespoon for garnish and set aside.

  3. Add the remaining ingredients to the shredded coconut in the food processor and blend until a soft dough forms. 

  4. Form the mixture into even balls using a cookie scoop that is 1-3/8" in diameter. The dough will be soft and sticky. It will firm up once it sets in the refrigerator. If you don't have a cookie scoop, you can form the dough into even balls with your hands, roughly an 1" in diameter.

  5. Transfer balls onto a line baking sheet. Sprinkle tops with reserved coconut. 

  6. Cover with plastic wrap and place in the fridge to set for at least an hour before serving. 

  7. Transfer to an airtight container. Store in the fridge (keeps up to 3 days) or freezer (keeps up to two months) until ready to enjoy.
