I created Baked S'moreos when I was a little girl. My fascination with the classic lemonade stand was unreal. I loved making lemonade and loved the feeling of selling my lemonade. On one hot summer day, I was determined to get outside and start moving my product. After waiting some time and while I had one or two customers, it wasn't enough for me. I wanted a line wrapped around the cul-de-sac.
As I reevaluated my set-up, I decided I needed a draw to get my customers to start lining up.
I ran into the house and grabbed whatever I could get my hands on that would bring customers to my stand. Then, I found Oreos, some vanilla frosting, a toaster oven, and an extension cord. Yes, I was quite resourceful and thorough as a kid.
I placed the Oreos on the pan that came with the toaster oven and covered them in the frosting. Then, put them quickly into the oven to bake.
What came next, was absolute bliss for my young taste buds. The cookies melted in my mouth! I don't think I shared one or even sold any. But, I did enjoy my new invention!
Earlier this year, my daughter wanted a dessert and we were out of our go-to treats. I had some Oreos, dairy-free chocolate chips, and marshmallows. No vanilla frosting though. I improvised and grabbed some melted non-dairy butter in its place in hopes that it would melt into the cookies the way the frosting had when I was a kid. And, it did!
I arranged the cookies on a cookie sheet with the butter, chocolate, and marshmallows and placed them in the oven. The Baked S'moreo was born! And, there is no going back. My girls and husband adore Baked S'moreos for dessert and I'm sure your family will too. No campfire is required, but you will need a fork!

Preheat oven to 350 degrees. Line sheet pan with parchment paper.
Line Oreos on a Sheet Pan.
Pour the melted dairy-free or plant-based butter/margarine over the cookies evenly.
Sprinkle allergen-free chocolate chips evenly over each cookie.
Put an allergy-free marshmallow on its side on top of each cookie. This will help prevent the marshmallows from falling off the chocolate and cookies as they grow when they are baking.
Place in the oven and bake for 8-10 minutes or until the marshmallows are golden brown and the chocolate chips appear to be melted.
Allow to cool to touch and serve. THEN, DIG IN!!!!
