This Bacon Broccoli Cheddar Flatbread recipe is an adaptation from a go-to restaurant of mine. I enjoyed it so much that I wanted to have the freedom of eating at home whenever I wanted!
During a shopping date with my husband, then boyfriend, on my first Black Friday shopping trip, we took a break in Seasons 52. We ordered cocktails and a few appetizers. One of the appetizers we ordered was a broccoli flatbread. I do not recall all of the ingredients that the chef used to prepare this dish. What I do remember is the combination of broccoli, a cheesy sauce with a little spice, and bacon. It was AMAZING! Little did I know that what I tasted would spark my at-home Bacon Broccoli Cheddar Flatbread recipe.
In an effort to simplify, and ultimately, make the recipe something I could eat at home, I made a few changes. First, I use prepared dairy-free, gluten-free pita bread as the base. Next, steam in a bag broccoli florets that I chop into smaller pieces. Then, I season the broccoli with olive oil, granulated garlic, salt, and pepper. Instead of a spicy cheese sauce, I use dairy-free cheddar shreds made by Daiya. Topped with chopped bacon and lastly, I infuse the spicy element using a lite drizzle of Sriracha.
Once the flatbread is built, it goes into the oven just long enough to crisp the bread and melt the cheese, approximately 10 minutes or so.
What comes out of the oven is a healthy portion of broccoli with a cheesy bacon bite that packs a little kick. It is incredibly delicious.
Go ahead, let your kids try it. You might be surprised to find they enjoy it. My daughter absolutely loves this dish. Who knew?

Crispy bacon, broccoli, and dairy-free cheddar with a touch of Sriracha spice makes for a satisfying bite that is full of veggie power.
Preheat the oven to 350 degrees.
Prepare a sheet pan lined with parchment or foil. Spray with non-stick spray or grease with your oil of choice.
Heat the broccoli in the microwave or on the stove according to packaging instructions.
Spray or brush the pitas with olive oil and place them on your sheet pan while the broccoli is cooking.
Once the broccoli is heated, remove it from the container and place it on your cutting board. Allow for the broccoli to cool long enough for you to handle it safely without getting burned.
Then, roughly chop the broccoli.
Evenly distribute the broccoli on the dairy and gluten-free pitas.
Season each pita with olive oil salt, pepper, and garlic powder.
Sprinkle chopped bacon and cheddar evenly on each pita over top of the broccoli.
Place assembled flatbreads in the oven for 8-12 minutes or until the cheese has melted.
Then, remove them from the oven.
Drizzle with Sriracha and allow to cool enough to touch.
Now, it's ready to serve and eat! Enjoy!
